The monks of Saint John's have been making maple syrup since 1942. The operation is currently being run jointly by the Saint John's Arboretum and the Monastery. Come join one of the syrup-makers, Dr. Stephen Saupe (CSB/SJU Biology Department), for a tour of the operation. We will tap a tree, measure the sugar content, see the evaporator, and learn about the natural history of this annual springtime tradition. Meet at the Pendulum in NewScience at 4:00 pm to carpool to the sugarbush. Be sure to wear shoes you don't mind getting possibly getting muddy and dress for the weather. We will end our tour with maple syrup sundaes topped with fresh Saint John's syrup.
