The nursing requirements are very demanding, students wishing to obtain a second major or a minor in another field may have to extend their education beyond 4 years or carefully plan summer coursework to support achievement of these goals. You should meet very early with the Nursing Department Chair to discuss the feasibility of obtaining a second major or minor in the timeframe you desire.
